The history of Casa alle Vacche 

Casa alle Vacche is situated a few kilometres from San Gimignano, surrounded by the wonderful landscape offered by the Tuscan country, in a particularly good area for the cultivation of the vines and olives.

The traditional farm, owned by the Ciappi family for generations, expands for 25 hectars of vineyards and 3 hectars of olive trees. Thanks to the nature of the soil and its ideal position, high quality grapes are picked and transformed using our experience, allowing us to produce the excellence of wines such as Vernaccia di San Gimignano, Chianti Colli Senesi and red and white Toscana IGT. Our farm which has been awarded the “Agriqualità” by the Tuscan Region, uses integrated cultivation techniques, in respect of the environment and of natural balance.

The production

Character, heart and soul of our wines are explained by their birth in the distant past, from a “family” concept of the vineyard, the attention dedicated at every stage: from the care of the grapes, the harvest, and culminating in the winemaking. In recent years, we are focusing mainly on native autochthonous vines, a “return to origins” where ancient cultures meet modern technology. From the second week of October onwards the olives obtained from our thousand trees are harvested by hand and then pressed within 24 hours. The native olive varieties Leccino, Frantoio and Moraiolo and traditional processing yield an extra virgin olive oil first cold pressing. Our oil is characterized by a very low acidity and a balanced taste, with intense fruity and aromatic notes reminiscent of artichoke and cardoon. Ideal with traditional Tuscan dishes, in particular as a dressing for soups and dishes of vegetables, perfect on garlic bread.   • The company earned the Agriqualità trademark awarded by the Tuscany Region, and it uses integrated farming techniques respecting the environment.
  • The name "Casa alle Vacche" finds its reference in history: in fact, in the 1800s, this area – especially where you can see the oldest building - was used as stables for the cows that was used to tow the wagons and work in the fields. The typical vaulted brick ceiling on the ground floor of the oldest building bears witness to this original use. The name also wants to evoke the simplicity, genuineness, and hard work of a family of winemakers.

  • Certaldo: this medieval town, hometown to Boccaccio, is beautifully perched on the hill. You can easily spot the Palazzo Pretorio, ancient home of the Alberti counts whose prisons, audience hall, archive, chapel and private quarters of the Vicars can be visited. Don’t miss out the Sacred Art Museum, located inside the Augustinian convent.
  • San Gimignano: this is one of the most popular destinations in Tuscany. In 1990, this medieval village featuring iconic towers became part of the Unesco Heritage. Visit the Torre del Podestà: with its 54 meters of height, it’s the highest tower in town since 1311.
  • Volterra: this Medieval hamlet still bears traces of its Etruscan past, – which is especially in evidence in its impressive surrounding walls –as well as its Roman legacy -with the remains of the theatre. Volterra offers plenty of attractions: the Museo Etrusco, the Duomo, the Palazzo dei Priori, la Fortezza Medicea and many others. Whilst in Volterra, you can also enjoy breath-taking views overlooking the Val di Cecina and the surrounding gorges.
