The history of Fattoria San Vito
The Fattoria San Vito has been in the family for about three centuries but it is only since 1989 that we cultivate the grape vines and the olive groves ourselves and make them into wine and olive oil from that same soil that has nurtured these plants since time immemorial. The proximity of the vineyard to the winery ensures the freshness of the produce. The entire San Vito estate derives its name from an ancient church dating back to A.D. 1000 whose archaeological site was discovered and excavated within our farm by the University of Pisa. Fattoria San Vito is an Associate VAN Vignaioli Artigiani Naturali whose intent is to produce the wine according to the following 5 points: is obtained from grapes from organic or biodynamic agriculture, also self-certified, harvested manually; arises solely from spontaneous fermentations (without added yeasts or bacteria); has a total sulfur content at bottling of max 40 mg / l for all wines, regardless of the residual sugar content; both without the addition of any additive or enological adjuvant in winemaking, maturation and aging; has not suffered brutal and invasive physical treatments.
The production
Our IGT Toscana certified wines are the embodiment of the terroir, of the Mediterranean climate and also of the love and passion we put in them from plant to bottle. The vineyard is fertilised withgreen manure and we plant the vines alternating therows with nitrogen-rich legume plantations, good for the soil, which are then mowed in spring. We harvest the grapes by hand and these are immediately wheeled off to the “cantina” to be de-stemmed and put in vats and then left to ferment naturally, with the skins still attached, without adding any yeast. We only use small doses of sulphur dioxide (even smaller than those sanctioned by the organic agricultural protocols) and only during the decanting process. Our wine is left to age in steel barrels and the clarification happens during decanting. We do not filter our wines. We sell our wine at the cellar and we ship abroad. Ask us a price quotation.
